On every freewrite that we’ve had in class so far I’ve somehow written about food. You could argue that is because we have class right before lunch time but I do think food is one of my great passions so I might as well write about that.

Just to be clear when I say food I don’t mean eating, I like eating no doubt but I was thinking about cooking. I love cooking. For myself or for other people, pasta or steak, grandma recipes or fine dining all of it is fascinating to me. I have preferences of course and I think that cooking shines brightest through fine dining.

I’m no chef, I have very little training, most that I know I’ve learned through youtube, my father (who learned it from his mother), or through trial and error. I used to cook with my dad when I was very small, and then I realized that if I cooked I didn't have to do the dishes. There it was, I had to learn to cook.

This was when I was about 14. At that point I knew how to make eggs, and that was pretty much it. But I figured that was a good start. If I said I went through 200 egg recipes in a couple months I would not be exaggerating, Gordon Ramsey’s, Joshua Weissman’s about every youtuber there is, every classical french cuisine book in my kitchen. I went through it all. But even knowing every recipe in the book I was not satisfied with my scrambled eggs especially, and it's only about a year ago that I perfected it.

But I did not wait for the perfect scrambled eggs to continue my cooking journey. I soon figured out that you could make everything from scratch and that not only did it taste great but it looked really cool too. That soon became my speciality, making everything from nothing. My pasta, my sauces, oils, broths… it lets me understand every dish a lot better and a lot faster.

Recently I have been trying my hand at gastronomical styles, mainly based on French cuisine techniques but inspired by cooking from all over the world. I’ve been organizing dinner parties by “hiring” some friends as extra hands. Food is definitely a great way to show many things: art, love, discipline; but if I'm being honest I think I just like showing off.

  10. Hi Nathan, I love that you are interested in cooking. My mom is an incredible chef and I have benefited handsomely from living under her roof. That said, I could take some inspiration from you and hone my own skills.

  11. Nathan- Really cool post. I myself have gotten into cooking a lot more, but really have been more experimental and making recipes from watching videos rather than cookbooks. Do you have other recommendations besides Gordon Ramsey?
